When I restring my nylon string Ovation, the string rubs against the head cut outs. How much string should I be wrapping on the tuning head?

You should leave only about an inch of slack before you start winding the string. Then wind the string until the string is in pitch.
You may want to stretch the strings while you are tuning them. This will allow new strings to stay in tune because new strings always stretch.
Once you have the string at the correct pitch, use a string cutter or a pair of diagonal cut
pliers to cut off the excess string.
You can prolong the life of your new strings by wiping each string with a clean cloth immediately after playing.
